For a growing number of travelers, a destination and its cuisine are inseparable, with the most memorable meals capturing a sense of place and ultimately becoming key ingredients in your fondest travel memories. And then there are the bites that make the trip, that correspondent and associate producer, Kim Schneider discovered in McAllen Texas at the Salt New American Table restaurant.
The exceptional beef served here is raised on the nearby, historic McAllen Ranch, the city’s namesake. And the Juice from the region’s famed Ruby Red grapefruit serves as a foundation of the distinctive and unusually tasty cocktails at Salt New American Table. Naturally, with Salt as the restaurant’s namesake, Kim discovers an enticing array of house-made salts, such as prickly pear, a local favorite of both people, and the tropical birds that bring ecotourists here in droves. Year round, locals and hungry visitors in the know flock to seek out the tangy creations of restaurateurs Larry and Jessica Delgado. The couple sought to bring the urban cool-food-vibe commonly associated with trend-setting Texas locales, such as San Antonio or Austin, to the Lower Rio Grande Valley in the southern tip of Texas. The culinary couple have deftly combined an industrial chic décor with warmth, and accented it all with the friendliness of chefs working in the dining room’s open kitchen. The Delgado’s masterful culinary offerings tempted Kim to inquire about their secret recipes. And she says, you too will likely want to ask the Delgado’s to reveal the secret to their fork-tender shank served with a green-chili mole dipping-sauce alongside a tasty corn cake—that had Kim begging for more.
